Michael Symon’s Pickled Chillis
Michael is currently on the West Coast touring colleges with his daughter. After the college tour, he heads back home to Cleveland for a few days and then is off to Palm Beach. The last leg of his trip leads Michael to New York. While in New York, he will be preparing his Carolina BBQ from Twenty and Michael Symon's pickled chillis with help of the amazing Ariane Daguin of D'Artagnan who suggested an American charcuterie dish at the International Association of Culinary Professionals (IACP) awards on April 2nd.
By the way I need give a big congratulations to both Michael and Donna for being nominated for the James Beard Foundation Award for Twenty in the General Cookbook category. Great work you two!

Pig Ear and Parsley Salad
Even James, the guy who handed me a bag of 20 pig ears, gave me a funny look. "What do you do with 'em?" It's not obvious, even to farmers, not in America. It wasn't obvious to me till I had my first one several years ago at Michael Symon's Lola, fried crispy on the outside, gelatinous and chewy on the inside, their richness offset by the sweet-sour heat of pickled chillis. Beer Vinegar/Food As Solace
Three years ago on this date, a Saturday, Donna, my mom, I, the kids, our dear friend Stu, and the dog spent the morning standing vigil as my father succumbed to the lung cancer. Mom had gone to the farmer's market and gotten corn and she and I stood at the kitchen island plowing through a dozen and a half ears, butter dripping off our chins. My dad, Rip, hadn't been conscious since very early in the morning, 3 am, Donna and I on the bedside, holding his hand. Zucchini Fritters Recipe
You'll never guess what was included in our CSA haul this week. Zucchini! That's right, amazing as it may sound, there they were, three big fatties at the bottom of the bag.
Seriously, it's not that I have a problem with zucchini, itself (though I did publicly disparage the zucchini a while back on Iron Chef America, which had a few zucchini lovers up in arms). I like zucchini. Julienned and sauteed in butter it's a simple summer side dish. Add some nuts, herbs and a vinaigrette to zucchini you've salted for ten minutes and it's a revelation (raw zucchini salad). There are indeed all kinds of things you can do to zucchini.
