I loved this Times article on one of the most undervalued tools of the kitchen.
My hands-down favorite: spatchcock.
You’re not kidding about the range hood being undervalued. The lady next door to us had an unventilated gas stove and died of lung cancer at age 82, having never smoked a day in her life. We were very close to her, especially my daughter, who used to come home from work and visit her at least three times a week, usually more.
Welcome to Ruhlman.com where I blog about food, cooking, recipes and technique, because the world is better when we cook for ourselves. Thanks for visiting and I hope you’ll join the conversation.
